WP3: Development of the egg protein and peptide-containing products
Objectives:
1. Development of radiation-crosslinked hydrogel wound dressings with antimicrobial/antioxidant
properties incorporating egg proteins, irradiated egg proteins or radiation-produced egg peptides.
2. Development of radiation-grafted food packaging films with surface enriched with
antibacterial/antioxidant egg peptides.
3. Selection of two demonstrators for scale up production and product validation.
Tasks:
3.1 Laboratory scale production of egg protein/peptide containing hydrogel dressings with
antimicrobial/antioxidant properties.
3.2 Laboratory scale production of active food packaging grafted with antioxidant/antibacterial egg peptides.
3.3 Selection of products and technologies for scaling-up.
